This method, similar to the Parker Points awarded by The Wine Advocate in the world of wine, not only defines the quality of coffee, but also serves as a bridge between producers and consumers, offering an accurate and standardized view of what makes a coffee exceptional.
How are SCA scores awarded and interpreted?
SCA scores range from 0 to 100 and are awarded based on 10 attributes:
· Aroma
· Flavor
· Acidity
· Finish
· Body
· Balance
· Overall
· Cup Cleanliness
· Sweetness
· Uniformity
During a cupping session, cuppers evaluate coffee samples. First, they analyze the dry fragrance of the coffee, followed by the aroma when hot water is added. Next, cuppers taste the coffee, paying attention to its flavor, acidity, body, and other key attributes. Cuppers give each attribute a score from 0 to 10, and the sum of all scores is the cupping score for the coffee in question.
Only coffees that score 80 points or more are considered specialty coffee. Between 80 and 84.99 SCA, we are talking about "very good" coffee; between 85 and 89.99 SCA, we are talking about excellent coffee; above 90 SCA, we are talking about exceptional coffee.
